Bistro North in Dillon has been on my radar since it opened a few months ago. Located in the Dillon Ridge Shopping Center, it sits up high with stunning views of Peak 1 (I highly recommend asking for a table with a view, or sitting on the patio which was still under construction when I was there).

We shared the Honey + Cashew Brie appetizer and it was absolutely delicious (I didn’t even get a picture)! For the main course I choose the beef tenderloin and my friend had the buffalo short ribs and we both absolutely loved our entrees but there are so many other good looking dishes that I look forward to trying in the future.

The cocktail and wine list complement the various menu items and is well rounded in both selection and price.

Bistro North is a great addition to the Dillon dining scene and I can’t wait to go back!
